The National Pork Board (NPB) & Publix have asked me to participate in a healthy eating challenge and I gladly accepted. For the next four (4) weeks Publix will be featuring a different cut of pork on sale in their stores each week. The “Good and Good for You Challenge” will challenge you to eat healthy while using pork in the new year.
We are definitely a pork friendly family but I often get stuck on how to use pork in a recipe and we usually stick to just pork chops because of my lack of knowledge with other cuts of pork. I am excited to open up my horizons and taste buds while trying new and exciting recipes this month.
Yesterday was the start of this month long challenge so if you visit your local Publix right now you can find Pork Tenderloin for just $4.99/lb (valid: 1/26-2/1).
To be inspired and hopefully find a recipe my whole family would enjoy I went to PorkBeInspired.com where my husband instantly stopped me when he saw the Pork Tenderloin Sliders w/ Three Sauces and insisted that I make them.
When I found the tenderloin it was prepackaged with two loins but since we’re only a family of 4 I knew we wouldn’t use it all. The employee at the meat counter was super friendly was kind though to unpackage them to just give me one loin slice it into 1/2″ thick pieces that would be great for our sliders! I love that Publix can help you with all your meat shopping needs and can customize things like that.
1 pork tenderloin, (1 pound), trimmed
1 teaspoon McCormick Perfect Pinch salt-free garlic and herb seasoning
2 teaspoons olive oil
12 mini rolls, (1 1/2-x-2-inches), split and toasted
6 romaine leaves, torn
2 plum tomatoes , each cut into 6 slices
Cut pork about 1/2-inch thick. Sprinkle pork on all sides with the seasoning. Heat the oil in a large heavy skillet over medium-high heat. Add the pork and cook, turning once, until the pork is browned, about 1 1/2 minutes on each side.
Place the tenderloin in the rolls, top with lettuce, tomatoes, and sauce of your choice. Yogurt-Lime Sauce, Goat Cheese-Basil Sauce, or Spicy Avocado Sauce.

YOGURT LIME SAUCE
1/2 cup plain low-fat Greek yogurt
1/2 teaspoon lime zest, grated
2 teaspoons lime juice
1 tablespoon fresh cilantro, chopped
With the sauce I used the bottle of Cilantro because it’s just as good and super easy to use. You don’t have to use my short cut though 🙂
We opted not to top our sandwiches with lettuce or tomatoes but I’m sure it would be just as delicious. The Yogurt Lime Sauce was tasty but it wasn’t the best sauce we ever tasted. We’ll definitely make the sandwiches again but try a different sauce next time.
Our sandwiches didn’t come out looking as gorgeous as the photo on PorkBeInspired.com BUT they did taste wonderful and that’s all that matters.
