Mushroom & Roasted Bell Pepper Calzone

There’s nothing better than a home cooked meal and a hot Italian meal if you ask my husband. I asked him what he wanted and he said a calzone. I was nervous because I never made one at home before but I was up for the challenge.

I’m not sure what happened but the picture of Makenna and I making the dough are gone. The only one I have left is of the dough when it was done rising.

Ingredients
  • 1 Tablespoon dry yeast (= 1 packet)
  • 1 Cup lukewarm water
  • 2 2/3 cup flour (extra for dusting)
  • pinch of salt
  • 1 Tablespoon olive oil
Instructions
  1. Combine the yeast and water in a small bowl.
  2. Place the flour and salt in a large bowl, combine, and make a well in the center.
  3. Pour yeast mixture and oil into the well and use a fork to gradually combine the flour with the liquid.
  4. Turn the dough out onto a clean kitchen surface and knead for 10-15 minutes, until a smooth elastic ball is formed.
  5. Place dough in a large, lightly greased bowl.
  6. Cover with a clean kitchen towel and put in warm place to proof for 1 1/2-2 hoursm until doubled in size.
  7. Turn dough out onto the kitchen surface and punch all the air out.
  8. Cover with the towel again and put in a warm place for 20-30 minutes, until doubled in size.
  9. Dough is now ready to use.

Once you have your dough ready it’s time to make the calzone filling!

Saute mushrooms and garlic with some olive oil in a sauce pan over low-medium heat until golden.

Slice up two or three bell peppers, and chop basil, add both to mushroom mixture and cook until peppers are softened. Season with salt and pepper. Refrigerate until cold.

Preheat oven to 425*. Heat your pizza pans for about 30 minutes.

Remove pizza pans from over and brush with olive oil. Stretch and shape two portions of the dough and fit to pizza pans. Allow to rest for a few minutes.

Spoon some of the mushroom mixture over half of the bottom of one calzone. Sprinkle with ricotta. Fold the dough over to encase the filling, pinching the edges to seal.  Repeat with the second calzone. Brush the calzones with olive oil and bake for roughly 15 minutes, until crisp and golden.

    I am pretty good at making pizza from scratch so I may have to give the calzone a try. I love red peppers on pizza and I think it pairs well with a sweet italian sausage. This might have to be on the menu this upcoming weekend!

    These look totally delicious! I’d slice up some steak thin I think and add that as well but with the peppers and all, I’d love it. Never tried making these before. Only bought them from pizza places
