Shrimp and Avocado Salad Appetizer

Recently, my friend Joanne made an easy Shrimp and Avocado Salad appetizer that I loved so much I just had to recreate it and share it with all of you. It’s seriously so super easy to throw together that you’ll want to make it no matter what the occasion.

I was in charge of appetizers at my husband’s recent office Christmas party but I didn’t want to bring something boring or expected. The bosses wife suggested just some “cream cheese spread and Ritz crackers will do”! I did my best not to let my eyes pop out of my head but I am very expressive so I don’t know how well that worked out. So instead I whipped up this salad and was so happy with everyone’s response but… unfortunately, I didn’t make enough. Everything was gone in seconds and I had people asking if I had brought more.




Let’s get to it! Shrimp and avocado salad appetizer here we come!!

Grab some celery and onion. Chop them both pretty fine then you can toss them in a bowl.

Clean, devein, and remove the tails of about 1 cup of whole shrimp and add them to your celery mix. Give it all a quick (gently. Don’t hurt the shrimp now!) stir then add some sour cream, salad dressing (like Miracle Whip. I hate the stuff on its own usually but in this recipe it adds that special zing, believe me), and finally some pickle and lemon juices.

Mix everything together until blended. Lastly, add your fresh dill (please use FRESH!) and avocado, taking care not to crush the avocado chunks, just folding them in gently. That’s it! So light and refreshing to your palette, it’s definitely a crowd pleaser.

Shrimp and Avocado Salad Appetizer
Prep time: 10 mins
Cook time: 5 mins
Total time: 15 mins
Ingredients
  • ½ Celery stick, large, diced fine
  • 1 tsp <g class=”gr_ gr_66 gr-alert gr_gramm gr_disable_anim_appear undefined Punctuation only-del replaceWithoutSep” id=”66″ data-gr-id=”66″>Onion,</g> diced fine
  • ½ <g class=”gr_ gr_64 gr-alert gr_gramm gr_disable_anim_appear undefined Punctuation only-del replaceWithoutSep” id=”64″ data-gr-id=”64″>Avocado,</g> diced
  • 1 C Whole shrimp, cleaned and tails removed
  • ¼ C Sour Cream
  • ¼ C Salad dressing (miracle whip)
  • 2 tsp Pickle Juice
  • 1 Tbsp Lemon juice
  • To taste Fresh dill, chopped
Instructions
  1. Combine celery, onion, and shrimp in a bowl.
  2. Add the sour cream, salad dressing, pickle, and lemon juices then combine together until well blended.
  3. Add the fresh dill and avocado, taking care not to crush the avocado chunks, just folding them in gently.
  4. This can be served immediately, but making it ahead up to two hours and letting it sit in the refrigerator helps blend the flavors even more.
  5. Serve on crackers. Enjoy!

      Definitely recommend serving on the crackers or maybe even pita chips would be great! As a dip the avocado could get crushed.
